Perfect Hard Boiled Eggs

  1. Don’t use fresh eggs. Keep them in the fridge for about a week or so before using them.
  2. Let them come to room temperature before cooking.
  3. Use a pan that will hold all the eggs in 1 single layer and cover them with at least an inch of water.
  4. Bring the water to a boil and as soon as it boils, turn the heat off and cover.
  5. Let them sit for 12 minutes only.
  6. Drain the eggs, and add cold water with a handful of ice cubes.
  7. Let the eggs cool for 10 minutes.
  8. Drain and store in the fridge.
