Easy Brining Solution

In a large bowl, whisk together 2 cups of apple cider.

  • 1/4 cup salt.
  • 1/4 cup of brown sugar.
  • 3 sprigs of fresh thyme.
  • 3 sprigs of fresh rosemary.

Add the turkey breast or pork loin to the bowl and add enough water to cover.

Cover and let soak in the brine in the refrigerator for at least 2 hours. No more than 12 is needed. 6-8 is great.

Basic brine solution

  • 1/4 salt.
  • 1/4 sugar.
  • 1 cup of chicken or turkey stock.

Pour this into a very large zip lock baggy and add the poultry/turkey or pork, then fill with water. Zip it closed while keeping as much air out as you can, and place this in the fridge.

This is different than a marinade. Brining flavors the meat and adds a lot of moisture. Marinades make things taste great, but brinning makes things taste great and keeps them juicy. Which is very helpful for poultry.
