Easy Apricot Ginger Chicken

Combine everything in crock pot (we use crock pot cooking liners but doesn’t matter). Make sure meat has been covered in the sauce. Cook for 3 1/2 – 4 hours on high – you can flip the meat once after 3 hours to even out the coloring on the chicken but otherwise leave it alone. Serve over rice with any veggie on the side. yum. looks fancy đŸ™‚

  • 3-4 chicken breasts (boneless, cut in half)
  • 2 Tbs soy sauce
  • 2 Tbs white wine
  • 2 Tbs lemon juice
  • 4 cloves garlic minced
  • 6 green onions, chopped, using mostly the green part
  • 3/4 tsp ground ginger powder (or 1-2 tsp fresh ginger)
  • 1/4 tsp ground black pepper
  • 1/2 cup of apricot preserves
